Depending on the needs of the participants, this activity can be carried out over the course of one or more days. Local operators recommend staying for several days. The activities take place in different ways and places according to the participants and their needs.

The visits are attented by the Ecomuseo Val Taleggio - Civiltà del Taleggio, dello Strachitunt e delle Baite tipiche. It is a non-profit association that aims to devise and implement projects to enhance the human and environmental resources already present in the area and to protect, promote and revalue artistic, cultural, historical and environmental assets through training, management and the dissemination of participatory practices.

It includes three interactive video-guided activities taking place at the two ecomuseum’s doors. They are carried out in different ways and in locations adapted to the needs of the participants. At the two ecomuseum stations it is possible to experience three theatrical video installations tracing the production, processing and maturing of cheese. At the Baita di Salzana is "In Vaccanza" and at the Porta ecomuseale Peghera "Tu Casaro" and "Stagionàti". The time schedule and the visit days will be chosen by the visitors, in agreement with the ecomuseum operators. Reservation for the visits is therefore necessary. No meals are included during the activities.

An ecomuseum is a cultural institution that ensures, in a specific territory and with the participation of the population, the research, conservation, and valorisation of a set of natural and cultural assets of an environment and the ways of life that have taken place there.

The ecomuseum is structured in three components:
1) The territory. The ecomuseum is not a building or a place, but encompasses the whole space and represents its characteristics, landscape, history, memory, identity
2) The population. It is the succession of communities and populations in space and time that has created the landscape and heritage of a territory
3) The heritage. The ecomuseum enhances the identity of the territory and its community and represents the set of assets of material culture - buildings, artefacts, works - and intangible culture - knowledge, tastes, tales, traditions, trades, customs
What makes this valley famous is the art of cheese-making and its products, such as Taleggio and Strachitunt DOP. The Ecomuseum has created ecomuseum stations where this activity can be discovered.

Activity 1

“In vaccanza”
at Baita Salzana

The Porta ecomuseale of Peghera hosts the video installation 'Stagionàti”, an accelerated theatrical course to learn, understand and apply the art of the Val Taleggio cheese ripeners, the final stage of the itinerary that tells the story of cheese production. By taking part in the course, it is possible to witness the journey of a team of 'seasoning workers' as they transport a maturing ladder from the Enna stream to the Alben meadows, 1700 metres above sea level, to make it assimilate the mineral elements, fungi and bacteria that populate the valley. During the staging, everyone will place their slice of cheese on the ladder to let it absorb the natural aromas left in the wood before tasting it. During the video presentation, participants will be given two pieces of Taleggio and Strachitunt PDO cheese, which they will have to taste according to the instructions in the video. This activity is accessible to all. We recommend a maximum of four wheelchairs in the room. An accompanying person for blind and visually impaired persons is recommended for all activities.

The ecomuseum Porta of Sottochiesa is located on the road leading into the valley from San Giovanni Bianco. It is the official headquarters of the Ecomuseo Val Taleggio and its Association. Set up as an information and first reception centre, it is opened on summer weekends, during events or at the request of visitors. An accessible toilet is available here.
